Slow Roasted Chital Shoulder
Ingredients:
1 x Chital shoulder
4 garlic cloves roughly sliced
1 cup chicken stock
1 1/2 cup white wine
1/3 cup lemon juice
Olive Oil
Thyme
Oregano
Salt
Pepper
Combine white wine, chicken stock and lemon juice and
pour over meat. Place the shoulder in a roasting pan
and cover with foil. Place into fan forced oven for 30
minutes at 220 degrees.
Make several small cuts into the meat and insert roughly
sliced garlic slivers. Finely chop Thyme and Oregano and
sprinkle over meat along with salt and pepper to season.
Pour a liberal amount of olive oil over meat.

After 30 minutes remove foil and reduce heat to 160
degrees for four hours basting with juices from the pan
every hour.
